Two restaurants planned for Copper Ridge | Colorado Springs ...

A local investor plans to open two restaurants next to the 117,000-square-foot Bass Pro Shop under construction in the Copper Ridge retail development at Northgate Boulevard and Interstate-25.

J.W. Roth, chairman of investment research firm Accredited Members, plans to open a Bourbon Brothers Smokehouse & Tavern and an high-end seafood and chop house this fall, coinciding with Bass Pro?s scheduled grand opening at the Copper Ridge retail development.

constructionThe Barb-B-Que restaurant will be known for its ribs and its whiskey, Roth said. ?This is the first Bourbon Brothers in the country,? he said. ?We built the whole concept around the legacy of the Bourbon Brothers in Kentucky.?

While originally designed to appeal to a Bass Pro Shops audience, Roth said he intends to begin franchising the restaurant nationally in 2014. He is the chairman of Bourbon Brothers Holdings, the parent company he set up to own the flagship restaurant in northern Colorado Springs.

?I?m an investor,? he said. ?That?s what I do. ?The restaurant space is new to me, but I fell in love with the industry and I saw a lot of opportunity here.?

Roth is also chairman of publicly traded Southern Hospitality Development Corp, which franchised Justin Timberlake?s Southern Hospitality New York restaurant in Denver last year with partners Gary Tedder and his musician son Ryan of One Republic fame.

While Bourbon Brothers and Southern Hospitality have a lot of the same investors, Roth said they are separate companies.

In addition to Bourbon Brothers, Roth said he plans to franchise a high-end seafood and chophouse restaurant at the Northgate location. He hasn?t completed the franchise agreement yet, so he said he couldn?t name the restaurant.

?But it will be five-star seafood with some celebrity or athlete ownership,? Roth said.

He expects that restaurant to open about 90 days after Bourbon Brothers.

Each of the two restaurants will probably employ 80 to 90 people, Roth said.

?We?re really excited about the area up north,? Roth said.

He said he expects Bass Pro to draw the clientele for his Bourbon Brothers concept and for the demographics on the north end of the city, where there is a lot of new home construction and a concentration of wealth, to support the seafood and chophouse concept.

Roth said he?s been a long-time friend of Gary Erickson, president of Northgate Properties that owns the land where the restaurants are planned. Erickson announced plans to build a luxury mall called Copper Ridge in the area several years ago. Skeptics in the city said they didn?t expect the development to succeed.

But when Erickson announced Bass Pro would move into his space last year, the development started to get fresh attention. The outdoor retailer is known for drawing strong traffic and even claims to be the top tourist destination in some of the states where it has stores.

?When he announced Bass Pro ? that?s really when I got interested,? Roth said. ?That really knocked the cover off of it.?

Erickson said there is other development planned for the area around Bass Pro, though others aren?t ready to announce yet. He said he?s also working on a hotel and water park concept for the area.
